I prefer restaurants that specialize in one particular type of food or cuisine. I have found, it is far easier for a restaurant to get things right, if they only concentrate, on one particular genera. This rule applies across the board. Do one thing, do it correctly and get it right the first time. This is a good rule for success in whatever is your endeavor.

In my experience, the restaurants that specialize do so because they do it well. If I can´t decide, I´ll go somewhere that offers a variety, but if I´m in the mood for Mexican food, I´ll go to a place that specializes because I know they´ll do it better than a place that offers a variety of food.

I prefer places that specialize in one kind of cuisine. A place that has variety across the board usually doesn't do anything well. (It reminds me of hotel food.) For example, I don't go to a hamburger joint to get Mexican food. I don't go to a Chinese restaurant to get french fries. I don't go to a steakhouse to get vegetarian dishes. Do you like the sandwiches at Starbucks or do they pale in comparison to a great deli? I'd rather go to a restaurant that does it's kind of food extremely well. If you consistently go to chain restaurants, like Applebee's or Friday's, then I suggest you try some places that do one thing well and compare the difference.

The only exception I can think of would be like a diner, which usually has a pretty broad spectrum of American classics. Top notch restaurants will serve a variety, but often those are based on what ingredients are in-season.

When my wife and I go out, we will often eat dinner in one place and get dessert at another because we are looking for places that do those specific things well.

I do prefer one type because 1. I am always the last to make up my mind and 2. I've had bad experiences ordering something the restaurant doesn't specialize in. Definitely one type of food.

I ordered a taco salad at a hamburger joint. They didn't even have salsa or jalapenos to go with it. I got sick.
Great burgers and never got sick eating them!
