Tell her that it would teach you discipline since horses are so hard to care for... Leasing or half leasing a horse is also easier and less expensive, so maybe you should convince her to let you lease a horse before you buy one. Make sure to prove to her how well you can care for a horse.

I always wanted a horse and until this summer never got one. It took me about a year to convince my family that I was responsible enough to take care of one. About three days before we went to pick up the horse, my grandma was still saying that it was a bad idea and that we didn't have enough money. Maybe your grandma just doesnt think that you have enough money. Maybe help out a little bit.

Find an in-between at first and prove that you can handle the responsibility.
Volunteer at a therapeutic riding center or horse rescue,
or at the humane society. You may not really have any idea how much work and money and dedication it takes to keep a horse.

well if you don't live with her its none of her business. but I'm thinking you do. fist resource horse and it will impress her with all the work you do then show her highlighted parts like what to feed it how much to feed it and how much care it needs. keep in mind its not a toy you an just ignore you have to give the horse the care it needs and deserves.
