Because we got confused. The Continental Congress actually decided on July 2nd to declare independence. But they wrote and rewrote the Declaration of Independence for a few days so that it actually wasn't finished until July 4th.
John Adams said:
"The second day of July, 1776, will be the most memorable epoch in the history of America. I am apt to believe that it will be celebrated by succeeding generations as the great anniversary festival. It ought to be commemorated as the day of deliverance, by solemn acts of devotion to God Almighty. It ought to be solemnized with pomp and parade, with shows, games, sports, guns, bells, bonfires, and illuminations, from one end of this continent to the other, from this time forward forever more."

It was the "official" date on the Declaration of Independence ... July 4th, 1776.
Actually, the Second Continental Congress held the vote on July 2nd, then spent 2 days making revisions to the Declaration.
Most of the signatures were added later, after getting a clean copy printed up.

Because "happy 1st of August" sounds stupid.
The Declaration of Independence wasn't official until early August.
We use this date to celebrate the "anniversary" of our separation from England and the Crown. We had officially became a land of the free, where everyone (white, Protestant, and male) was equal and free to worship their religion (so long as they worshiped Jesus Christ and God).
It's America, we celebrate things for reasons we no longer know.
It's now just another day off work, full of fireworks and fun.
