It's a tradition that was started years and years ago by the early players of the sport. They exchanged not only shirts but all sorts of things. For example young players from Scotland, England, and Ireland exchanged caps after they played each other. They still probably do this until now.

Like other said good sportsmanship and it has been a tradition.
They will have something to remember their opponents by. Only happens in Cups. never happens in regular season games lol. or else players would have tons of opponent shirts.
But not all do it. especially when they really hate their opponents.
as i said above those who do it shot good sportsmanship
