for the most part anything that ends with the letter E because it causes your lips to form a smile...
Buuuuut if your like me I always just start mumbling under my breath something funny or I'm telling a joke and right when the punch line is given everyone laughs.. but you have to be really good to get it to work at the same time... lol THAT takes lots of practice for that to work naturally... if not then you'll have to retake the picture cause everyone will look confused.. ROFL!!
OR you could just touch a hiny or two.. that always gets a smile.. Shhhh...
If anyone asks... It wasn't me... I was on the other side :-D

It depends on the crowds getting their picture taken. Any word or short phrase which elicits a surprised, funny response is fine, as long as you don't get gross or offensive about it.
If it's close family, keep it clean ("Say 'Cheese'", "Say 'Shut Up, Earl'", etc)
If it's your wife's family, it doesnt have to be so clean ("Say 'Handjob'", "Say 'Butt Ranger'", etc')
If it's a work thing, you can be a rowdy as the least rowdy in the group being photographed. No "Say 'Anal Sex'" at your Catholic School Reunion.
If it's someone who just asked you to take a picture of him and his family and hands you his camera, start running and lfeel proud of yourself. You just taught another tourist a valuable lesson.

Once for a school photo everyone before me said fun stuff like "Cheeseheads", "Money", etc. Well I had to say "I am the girl kind of sex." Of course I wouldn't do that so I said "Cheese" and I got detention for a week! (That's OK because I made the teacher I hated most stay from her affairs with another teacher!)

Anything that brings a natural smile. With women, saying the name of their child or children or their grandchildren will not only bring a smile but soften the lines in their face. Also, in the case of women, have them say: "I am pretty... I am loved... and... I've got a secret"... brings a really coy look to the eyes... snap quick.!
With a child, anything age specific works... "Barney" or "Peter Pan" etc. works well.
With men, you just have them think about the best sexual exercise they ever had or have them remember their first car... brings a smile every time

Just recently I've fallen into the habit of getting together these nice size group photo opportunties, telling everyone to smile, and then saying something completely off the wall, random, and shocking to get a reaction out of them all and snap the picture while they're reacting. *laughs* it actually does work... and the pictures are priceless!
ex. right before i clicked the shutter i told them how amazing it is that despite his age my grandfather's balls really are quite smooth... *evil laugh* man... that was one HELL of a fun picture...
