It's only under the Magic Kingdom, not the whole of Disney World. That's the first part of the park they built. (There might be some under EPCOT. I don't know.)
What's the underground stuff for? All the operations are underground. Machinery for the rides, electrical, plumbing, etc. etc. And, yes, tunnels for the employees. And staff rooms. Dressing rooms. Support. Heating. Cooling. Ventilating. Offices. Lunch rooms. And so forth.
It's not pretty down there and there's not windows, but that's actually the first floor. They built that first, and then built the Magic Kingdom as we know it on top of it. So while everyone thinks they're walking around on ground level, it's actually the "second story," if you follow.

Because Walt Disney, while visiting Disney Land in California, saw an employee from frontier land in his full uniform, in another section of the park, He decided to build an underground way of traveling for the employees at Disney World in Orlando. There are carts for transporting everything needed for the above ground activities, all of their offices, their dressing rooms and their lunchrooms and lockers are all underground. That is why no one is ever out of place in the Orlando park, and they don't have those carts fill with stuff being driving by employees all over the place.

Yes. The posters who described all the tunnels are correct. I haven't see it, but I plan to next time I go. If you go the customer service area, you can ask for special tours that show stuff like that. I think you have to make reservations and pay extra though. Most people would rather just ride the rides and not worry about stuff like that.

Under the Magic Kingdom is basically everything needed to run the parks. Costume rooms, electrical, etc. You can take a tour down there as well, it's really cool! (Assuming you get into that type of stuff.)

Actually it practically IS a city...or at least a huge infrastructure. In addition to the obvious (water/sewer pipes, electric lines, etc.) there are staff/character support areas, control rooms, storage facilities, emergency facilities, and miles of huge tunnels to allow things to be moved around.
