They may be mostly for protection against large animals, such as deer and cattle, but, since many roses are climbers, they certainly help the plant in getting a grip on whatever it is climbing up. Other rambling members of the family (blackberries, for example) also have similar hook shaped thorns.

Rose flowers, leaves and rosehips are edible; so the thorns are to allow the plant a chance to grow and reproduce.
