that's tough. It's really hard to change her thinking about being fat, but you can help build her self esteem. Have her look at herself in the mirrior, and name all the things she likes about herself, and then point out some things that you like about her. That should help her feel better about herself and make her look at herself in a more positive way.

The best way to tell a girl that she is not fat when she says she is is not to say anything but to show her. If its a friend take her to have her picture taken with you, it will show her that you think she is beautiful and that you would be proud to be frozen in time with her at that moment. If it is a girlfriend or wife, you need to get brave and talk to her about what she thinks about her figure. Then you need to take her to bed and kiss her everywhere she is insecure about herself. It worked for me. I was so insecure about my body after I had my daughter that I didnt want my husband to see me naked. The worst was the stretch marks left all over my body. He found out about this and proceeded to kiss every stretch mark that he could find. What a romantic, thoughful and sexy way to show me how beautiful he thought I was.

If she is fat, don't lie to her, but I assume that this girl has a normal weight and figure. You can tell her that she looks just right, but don't keep talking about her weight. If you keep repeating yourself, she will think it is a big issue. Tell her you like her, you think she is a perfect size, she has a great sense of humor, she is really clever, her smile is delightful, her eyes are gorgeous, her skin is silky, her fingers are graceful, etc. (picking her best features). You want to make her feel good about herself and don't want to let her weight become the center of conversation.

tell her to look at the entire american population 60% are obeese/overweight tell her there is no way she is either and ever will be and that she really has nothing to worry about because all of those celebrities and models are actually an unhealthy size and you like her just the way she is and would never want her to change to fit the looks of someone else and that the only reason she should change is if she is 100% doing it for herself

...you may want to compliment her and help her with her self image problems. If she is anorexic and has an a real perception problem, then she may need professional help...but unfortunately you are probably not the one who should suggest this.
On the other hand, she may be just saying she is fat to get reassurance that you think her weight is good.
...Can't you read her mind? Ha!!

There is no best way. They'll get mad, hurt, or upset anyway. They may cry every night for a weeks. Probably fall into a depression. Hey, maybe then she'll lose weight from loss of appetite.

This is often the root cause of eating disorders (incorrect view of ones own body image). If she is heading this way get her to get help. If its only a minor issue (for now) get her to measure up and compare to the published stats. (or get some hunk to tell her she is looking peaky and thin).
