I have done it many times. I sew a plain backing on to the back of my project because cross stitch fabric has a lot of holes and you don't want the batting to pull through. Then I cut a piece of material I am using for the backing the same size as my cross stitch piece and place them right sides together and stitch one quarter inch away from the edge all the way around leaving a few inches open to turn. Turn your piece. Press. Stuff. Turn in the remaining raw open edges and whip stitch. Voila your pillow! You can get fancy with laces or piping if you wish. Good luck and happy stitching.

This site has some good instructions for different methods of finishing cross stitch projects:

They feature both a basic pillow style (to which you can add cording or a ruffle depending on your tastes) and a "framed" pillow style which uses fabric to create a frame for the stitched piece on the front of the pillow.

Both of the previous answers are excellent. I would like to add this tip. Purchase some lite weight iron on fusible. Cut a piece the size of the embroidered area of your work. Iron on the back side of your work. This will seal the threads so that the locking threads do not work loose once the pillow is in use. Glad you husband takes pride in your work. Good job.
