The AOL server.

Not your network server.

It depends on the IM - MS Communicator, as an example, logs everything, and the Communicator admin has the ability to read these logs.

Most types of IM communication rely on a central server to make the connection between two clients. I would imagine that there is some way for any IM provider (MSN, AIM, Y!, ICQ, etc) to log those connections, and possibly even the chats - but most wouldn't do so, simply because of the HUGE amount of storage that would require.

My best advice to you is the same one I would give regarding email: If you don't want someone else to repeat it later, don't hit 'SEND'

if the server is acting as a gateway, it can be used to view/filter any traffic going though it, including IM conversations. Since most conversations are in plain text it is actually not too difficult for someone on the same network to view them as well.
