Do you mean vary on the one person depending on how they feel? ie going green with illness, red with sunburn etc?

Or do you mean vary between individuals, ie Africans tend to have darker skin than Europeans?

hi there!
in our body, just below the skin, in the hypodermis region, there is a pigmenting substance called melanin. this pigment is the main reason for skin colour. the more the melanin, darker the skin is.
also, the quantity of melanin in skin depends on the geographical location. the places where the sun strikes more or where the sun is hotter, people are darker in colour. this is because human body adapts itself according to the temperature and produces more melanin. the reason is that the UV rays of the sun helps in producing more vitaminD in the body. this vitamin is very essential for the production of body pigment called melanin.
it is also said that this melanin helps human preventing from the harmful rays of the sun which causes cancer. so, u can say that it is a natural means of preventing oneself from cancer due to sun's harmful rays!

hope i have answered ur question.
good luck.

Skin color is totally dependent on environment. Back when there wasn't travel between nations and all of the innovations we have today, the populations of each portion of the world adapted to their respective regions. Dark skin, light skin, dry skin, oily skin, and everything in between is a response from continual exposure by our ancestors to the weather and environment of each region of the world, to help the people in each area to adapt to their unique environment. Kinda interesting to think what we may become over time, since we integrate and travel so much now.

primarily in the pigmentation. e.g. Blacks are born with large amounts of Melanin which gives the dark (brown) colour.
Also, the human skin adapts to changes in weather conditions , sun and climate. from the beginning of the World, this is a cause of dark Arabs, white Eskimos, yellow Chinese, suntanned Caucasians.etc. ADAPTATION

The first humans remains were found in Africa, therefore, the first human was black. As the population grew, and humans migrated to other parts of the earth, skin color adapted to the change in the environment. It got colder towards the north, so skin became lighter, eyes, etc. Like the eskimos: their eyes are slanted to protect them from the very cold wind, and their skin is like leather for the same reason.

People were for sure black in the beginning, but as we moved north the skin was not able to create enough vitamin D so lighter skin color were better, in the sense of creating vitamin D with that amount of sun available, they were healthier and breed more, people that stayed in heavy sun areas still have the level of melamine to create the vitamin D they meed.
