For 18 people, with 18 different tastes, I would do a baked potato bar. You can prepare both vegetarian and non-vegetarian toppings. Steam a large bowl of broccoli. Have butter, sour cream and fresh chives also. Fresh homemade salsa would be good. My wife suggests also having several different kinds of cheeses, like blue cheese, parmesan, cheddar, and pepper jack. For your non-vegetarian friends, you might also fry up some bacon or some taco-seasoned ground beef. As a variation on this, you can make a giant bowl of mashed potatoes and do the same thing with the toppings.

A second suggestion is to prepare several kinds of quiche, which can be served cold. The basic shell (which you can buy) and egg mixture are identical for all the quiches. You can use different ingredients to create different kinds of quiche. Below are instructions on how to make a quiche.

1. Buy frozen pie crusts. Probably you'll want 5-6 to have enough for everyone.
2. Preheat your oven to 350 degrees Fahrenheit or 177 Celsius.
3. For each of your pie crusts, whisk together one cup of half-and-half creamer and two large eggs until completely incorporated. Add a pinch of salt and a dash of freshly ground nutmeg (optional) and give a final whisk.
4. In each of the pie crusts, fill with whatever ingredients you want. Suggestions include cooked vegetables (spinach or broccoli are popular) that have been squeezed dried, shredded cheese (avoid mild cheeses like mozzarella), sauteed mushrooms or onions, artichoke hearts, or sun-dried tomatos. Cut up cooked bacon or ham for your non-vegetarian friends. Don't fill to the top or pack it tight. Toss together making sure there's room for the egg mixture.
5. Pour the egg mixture over the filled pie crusts. Bake for at least 35 minutes. You can check to see if it's done by poking a hole in the middle with a toothpick and pressing down. If liquid comes out, then there's more cooking to do. Otherwise, it's done.
6. Let cool for at least 15 minutes and serve at room temperature or even cold.

Toss some of your fresh veggies in Italian dressing and grill them just until they start getting a little soft. Cut them up and toss over some pasta. In a pan put a little butter, garlic and salt ( and parmason cheese if you wish) and pour over, serve with breadsticks or a crusty french bread and a nice tossed salad. Yummmy. My family loves it and we're not vegetarian. And the best part is you won't heat up your house with the oven.

Get a white fish (tilapia) - 3 pounds or so -

in a baking pan - melt butter and pour on the bottom
spread stovetop mix on the bottom
fish
more melted butter on fish
top with stovetop
bake at 375 - watch until fish is flaky

add a salad and some veggies and serve

Try a Veggie-Platter. It has cucumbers, carrots and eggplant. Chop it up and put in on some plates with ranch dressing in the middle. It'll cool you off and you could probably use something from your garden.

Set table and chairs up in the garden and purchase the dinner already made. Time is too short for anything else, unless your garden is so plentiful that you can take your guests out there and let them 'graze' unaccompanied and to their culinary delight.

you could prepare a good cold rice salad dressed with tuna,sweet corn, carrots, little cheese cubes and pickles.
