The QB does pinch the Center on rare occasions. It is a play that is decded by only the QB and the Center. It is usually a quick snap allowing the QB to run a sneak. Not sure if you were trying to be funny. But this play does happen.

On occasion, they will "goose" the center to have the ball snapped back faster, but I never heard of pinching him. I'm pretty sure that if that happened, the center's loading up on bean burritos before the next game.

Batmen is correct. Usually it is an audible, or a QB sneak. Dan Marino I believe made that famous. He ran halfway up the field with only his center ahead of him.
