You could, but I don't believe anyone has ever produced a stroker crankshaft for that engine, unless the crank from one of the later engines based on the 2.8 has a longer throw and will fit.
If you want more power I would seriously weigh the cost of swapping in a V8 against building the 2.8, the swap may be cheaper. Advanced Adapters sells a swap kit, and a good running small block is easy to find as are performance parts.
There is really no point in wasting money on the 2.8. There is no substitute for cubic inches.

if you are trying for performance... why mess with a 2.8? why not at least a small block swap. work well in S10's. but if your dead set on a V-6 try using a 4.3 found commonly on the drag strip running pretty low ETs

I wouldn't do anything to that motor...they were not made right. I saw tons of them in Germany that people took on the autobahn. They always threw out the crank shaft. There is a problem with balancing, stroke angle, or something. I would go with a 305....or, if you must stick with a 6 cyl. go with a 3.1.

dont waste your time with a v-6 drop a small block in it way more upgrades for the small block and a lot less hasssle
