hostess...host (root word often masculine) -ess feminine ending much like a painter and a paintress or master and mistress. There's the difference in the wording.
As far as the physical job is concerned. I am certain there are males who act as host or more plainly and boring greeter in restaurants, but yes more women do have that position. It's no secret the female body is more pleasing to the eye, especially for the men an women who spend their money and eat or more expressly drink (drinks are a big sell for restaurants). believe it or not, our country is still sexist, although it is more of a kinder and gentiler sexism than 30-50 years ago. Today woman can go far legally, however many people still hold onto the idea that socially, a woman alone will still be a wallflower.
Women can hold a manual labor job (one that was often seen in the past as a boys club posistion). These women can do the job flawlessly, but there will always remain a certain man somewhere who thinks that either she should not be there, or that he needs to be "da' man" and help her when she oviously doesn't need the help. Down here in the south we call that a Southern Gentleman, personally I call that a fish....someone looking to "fish" for the woman's thank you, like she is too fragile to finish up the work. That's the soceity we live in a place where sex appeal sells and the moment any one walks into a restaurant and sees a pretty lady greet them they feel compelled to smile. I'm not sure if that's a compliment or not.

Please be more precise with your question. Do you mean hostess as in someone on an airplane, or someone at a restaurant, or something I've missed?
Only females can be hostesses because the word hostESS is feminine. However I don't think you had that particular question in mind so I'll try to answer what you were probably asking.
Flight attendants can be male or female.
As far as restaurants are concerned, a maitre d'hotel (master of the hall) or the host/hostess can be male or female.
