Gene Hackman - not a glamour boy, but what a range - he disappears into his roles. Another current actor who does the same is Russell Crowe - his performances in LA Confidential, The Insider and A Beautiful Mind show an incredible range.
As actresses go - Meryl Streep is the most versatile, but I would put Judi Dench and Brenda Blethyn way up there too. Of the younger actresses... Scarlet Johansson is pretty impressive.

Base on my belief that an actor with true range disappears into his/her character, and it no longer is the actor portraying the character, but the character that carries the film, of living actors today, I'd have to say Philip Seymour Hoffman. Look at his body of work and the variety of roles he's successfully played without stealing the spotlight or elevating his name above the importance of the character. On the actress front, I'd have to say Nichole Kidman, but you have to sit through a lot of bad, or at least not so good movies to see her true range.

the list just goes on and on. He doesn't take the easy roles, and he excells at becoming the character he's portraying. More versatile than any other actor I know.
He's just flippin amazing!
