I heard after 7 years items will "drop off" your credit. Is this true?

If you are talking about the reporting time with the credit bureaus it is 7 years for things like credit cards etc.that are closed, reporting negatively. (but you can try to dispute things off early, about 6 months, as obsolete)

10 years for tax liens, judgments etc.
