I am a big Superman fan... but Galactus eats entire planets for breakfast, lunch, and dinner! However, if the pre-crisis Superman took him on... then maybe there is a chance. But if the post-crisis Superman took him on, his powers are too scaled down to even tickle Galactus.

Movie or pre-crisis Superman would defeat Galactus, but post-crisis Superman couldn't do it by himself. Galactus' mastery over the power cosmic could absorb all of Supes energy gained from the yellow sun, and snuff him out. But the older more powerful Supes would ignore the power cosmic, and knock Galactus into next year (Fantastic Four and the Silver Surfer, the title of FF2)

If he wasn't holding back at all and he knew the fate of the galaxy or planet rested in his ablity to take him out. He would find a way to take out Galactus. That's just what Superman does.
