I have investments with HDFC & SBI mutual funds.Can i add my wife as a joint holder? How?

Yes, you can. Write a letter to the fund house/registrar by mentioning your wife's name who will become a second joint account holder for the specified account nos. Also specify what kind of joint account holder she will be ("Joint", or "Either or Survivor").

Sign the application and include her specimen signature.

If one of you is a NRI, and the other is non-NRI, and existing fund holding is a NRI funds, then joint application cannot be made unless both of you have the same status (NRI or non-NRI).

They have forms for this
If you have a broker call them
If not call the 800 number for the forms
Basically you sign it over to a joint tenancy with your wife
