I don't know about TX - or what job you're in but in some jobs yes they can. I've also had jobs they can work you every day for 7 months with no real days off. It was legal - do it or quit. If it's an agriculture position places can do about whatever they want...here in AL there is no law against working without a break nor is there a law that allows for days off. And if you're required to do something and take time off to do it - and get fired because of taking one day off...there is no recourse. And if it's a small enough place they fall through the cracks of unemployment.

Texas is considered an "employer friendly" state because the TWC (Texas Workforce Commission) acts as agent for the employer and complaining to the TWC is a waste of time.
Unless you can afford an attorney to take a lawsuit to a federal court, the only right a worker in Texas has is to quit his job. And, at the rate we seem to be going, that will soon be illegal.
There are rare exceptions to the above, but they are very rare.
