Mostar is nice,
Plitvice are wonderful
Split is fascinating
but Dubrovnik rules them all!
Maybe you just get in time for the closing ceremony:

Visit definitely Sarajevo (one day is enough I think - besides the Old town, try to visit some monuments from the last war like war tunnel that goes under the airport),
Mostar (and some places in its vicinity like Blagaj and Pocitelj),
Dubrovnik is small but really beautiful city.
I believe there is nothing much to see in Split, better go to one of the island (like Hvar).
Plitvica lakes are also very very beautiful and you will need a whole day in order to see them. If you go there, then there is a really nice little city in Bosnia called Bihac (the river and its banks are beautiful and clean)

stay in sarajevo at least 2 days, its beautiful... sarajevo and dubrovnik, those are the only two places worth staying more than a day... but watch out, dubrovnik hotel prices are some of the highest in the balkans.. in fact, the most expensive hilton imperial of its class in the world is right in dubrovnik

Croatia is very popular these days, but i think you will find nice places in BiH, too. I've only visited Dubrovnik, awesome place, but i've heard that Mostar and the lakes are worth seing too.
Maybe someday you'll be able to visit OHRID, Macedonia, as well, beautiful and AMAZING place....
So, where ever you go HAVE FUN!!!!

I would say Croatia, Dubrovnik is nice, lots of old buildings. But i would go more North Like Rijeka its beautiful there.

For the Plitvice lakes you should reserve at least one full day. They have trails around the lakes which are just beautiful to walk and is best to start walking around 9 a. m. and end around 5 p. m.

I would concentrate on Croatia (and Slovenia as well) - the other parts are still very affected by the war and have poor infrastructure.
Croatia is really a growing destination for international tourism.
