I wondered the same thing, but on the DVD set, there was an interview with Joss Whedon in which he actually explained it.
He said that in our time, the two big powers in the world were the US (English) and the rising power of China - so he extrapolated that, in the future, we'd be speaking in a mix of the languages.

Joss thought that in the future, both Chinese and English would be equally as important and universal. In fact, there is a great deal of Eastern and Western cultural elements mixing all over the show.

Because in whedons vision of the future the chinese have grown as an empire and superpower, due to their current status as a rapidly developing power today.
Meaning people have learned their language as they are like America is to the world today highly ionfluential in trade and culture.

I believe it's a nod to the idea that in that future, the Chinese became an economic super power, ubiquitous in business, and Chinese became the language of the economy; thus, everyone would have to learn it.

To add a little detail, Joss said that when people left Earth to form a new civilization, the two major superpowers (America and China) formed an alliance which eventually merged into one "nation."
