I want to be nice, but I can't think of a good way to say it, and I have a feeling shes willing to put up with this longer then I am.

Why not follow up with her "do you really want to go out with me" line with an, "I'm not so sure", and then explain. If she's asking you constantly, you've obviously been giving off signs or maybe she wants out of things too.
No matter what the wording or how you start, you've got to get upfront and personal...get it done and I think you'll find that the things you fear the most...are never as bad as you expected.
...and for the record...bodily harm isn't the way to go. You'll be a great spouse someday, don't change your consideration attribute it's worth a lot more to you and everyone else than a backhander and the repercussions that go with it is. If you want this to cause you trouble, backhanding WILL do it..

You could take the chicken way out....just start acting really, really weird, like pretend your sock is a pet. She should get freaked out and break up with you. Or you could ask her to marry you, and when she says no, cry and say you need the committment NOW or you'll be too broken-hearted to continue the relationship.

Just say "you know how you always ask me do I really want to go out with you?" and then when she says "oh my god" just say, "well I think it's best if we just call it day, were just not suited to each other, you'd be better off with someone else"
If she goes mad, just show her the door.

just tell her that you need time right now because your caught u with work and school and things with your family arent going so well, tell her that your not ready for a relationship right now but you still care for her a lot
