There's way too many for this question to really be fair. At one point, I could tell you the life story of almost any character on screen in the original trilogy. For example:
BoShek: In the cantina, he's the guy with the sideburns Obi-Wan talks to right before Chewbacca. He has a latent force weilding ability, though untrained. Obi-Wan warned him about this and to use it for good. This advice helped him later escape stormtroopers that were after him (the same ones that Obi-Wan used the mind trick on). He is also the only pilot to have beaten Han Solo's Kessel Run mark.

Oh, and just to prove it, how about a character, not on any of the lists above:
Davin Felth : the stormtrooper who said "Look, Sir, droids." He also participated in the slaughter of the jawas and the encounter at Mos Eisley. He was so moved by the experience, seeing Solo and the others determination, and his actions that day, that he became a spy for the rebel alliance. He later killed his commanding officer who was about to fire on an innocent. He informed the alliance of upcoming attacks on rebel bases helping save countless lives.
