I emailed a guy telling him to stop calling my girlfriend names like baby and sweetheart. He said that one day, he was going to steal her from me. I said,"If you do that I might have to come after you, lol jk." Now he is threatening to sue over this. Can he?

Also, I had already talked to him and kinda made friends with him before all this started. Note that him and my gf. met over the internet and he has been asking for a photo, address, and phone number from her.

Sure, he can file suit against you. A judge would have to be high to even listen past the first part of the complaint though.
So, can he sue? Yes. Can he successfully sue? Hell, no.
In fact, you could sue him for threatening to sue you...

I don't see how. If he files a complaint with police, it is likely they won't do anything unless you've taken steps to physically harm him. If he files a civil suit, there really isn't any sort of property or monetary damages done, so the judge is likely to rule in your favor.
If the guy is becoming a nuisance to you and your girlfriend, you might be able to file a restraining order against him. Depending on the situation, of course.

You can file suit against anyone or anything. Whether it is thrown out or or prosecuted is another story. I personally would take a closer look at the actions of your girlfriend. What is she doing to invite such talk and requests. I'm thinking that she is enjoying this more than she lets on. Just my opinion.

he cant sue you. but he can call the police and tell them you are threatening him the "lol,jk" means nothing the statement is that you threatened him but dont worry about it police probably wouldnt do anything unless they felt they had reason to like you have threatened people in the past

You can sue for anything, but that jackass will probably be wasting his time. You can sue for assault or harrassment when you are afraid for your safety for a reason. A lol email probably won't stand up

If he can sue you for something stupid like this, you can probably sue him back for what he said too.
