If it where me i would plan a trip to a spa.... relax together.... Go have lunch and a afternoon or you could invite her over and fix a nice dinner and take lots of photos and be truely intune with surroundings

Be sure that she knows that you will miss her and tell her that she better call at least once a day. Go out with her and do something fun that the both of you won't forget.

just try to spend as much time with her as possible. take a camera around with you. have fun.
