A phobia can start at any time and at any age. Sometimes they are triggered by outside stimuli, sometimes not.
I know you want answers, but there just isn't any. All you can do is learn your responses to various situations and manage it.
Be aware that phobia is a fright response being triggered when there isn't any danger. Your brain tells you that you are in danger and every other response happens.
Once this is triggered, your response will peak in about 5 to 10 minutes and will be gone in 15 to 20 minutes. While this is going on, your will be freightened and every single physical response will happen just as if you are in real danger. As far as yoru brain is concerned, if the danger is real or perceived, it just doesn't matter. You will sweat, blood pressure will rise, breathing will be fast, and heart beat will rise. Your hair will stand on its end.
You can manage it in different ways. You can choose not to use the elevator. You can also repeatedly use the elevator and make yourself numb to this stimuli. Or, just know you will panic and let it be, knowing there IS no real danger.

People who like to be in total control sometimes fear things they cannot contol. Possibly an event happened to you recently which may totally unrelated to cause it .This may be a result of a physcotropic drug also if you have been precribed medication. Check with your doctor if it be the case
