I have a great tasty, health conscious dessert. It's a "Jello Cake" (what my mom always called it). Buy a white cake mix, and red jello (any flavor-small box), and some Cool Whip (can buy the fat free!). Make the white cake mix as it says on the box (using the 9x13 pan directions). Let the cake cool. Mix the jello packet with 1 1/2 cups of hot water until dissolved, then poor in 1/2 cup of cold water. Once the cake is cooled, take a fork and poke holes all over the cake. Then pour the jello over the cake completely covering the top of the cake. Then let that sit for a few moments to soak. Cover the cake with the Cool Whip. For an Independence Day theme, you can purchase some blueberries and strawberries. Slice the strawberries in half and use those as the stripes of the flag and the blueberries for the stars section and create the U.S. flag on top of the cake! This cake must be refridgerated!
Not only is this a fresh summer dessert, but it is also tasty and still on the healthy side!

Everybody loves Ranch Dressing right?
Here is a good recipe that you can adept to your families likes and dislikes. Make it plain, or dress it up, cuz "company's coming".
This recipe will fill the large bowl in a standard sized 3pc mixing bowl set. Best if made the day before the party, since you will need to add extra dressing, as the pasta absorbs ranch like a sponge.
Cashew Pasta Chicken Salad
4 cups cooked Multi colored Rotini or Bow Tie Pasta - (any pasta will do, but these two kinds make for a nicer presentation)
2 bottles Hidden Valley Ranch dressing - (Can use any brand, even the lite version, but they are thinner, and may not coat pasta and nuts evenly) Keep 2nd bottle refrigerated, to keep salad at the coolest temperature for serving.
1 stalk celery - thin or thick chopped, it's there for the crunch. Use the leaves, good flavor and color.(2 teaspoons of celery seed, or 2 teaspoons of celery salt can be used instead)
1 6-8oz can drained baby peas - Hate peas?, leave 'em out. I do.
1 lb chicken. Diced white and dark works best. (Turkey can be used, although turkey dark meat can be a bit too strong tasting, so you may want to cut down on the amount)
1 lb salted cashews - Peanuts or walnuts can also be used. The salted nuts taste the best, but if watching sodium, use unsalted. The ranch flavor will still make the nuts taste great.
Mix all ingredients together, except for 2nd bottle of Ranch, cover and refrigerate for at least 3 hours, overnight is best.
Before serving, stir and add 2nd bottle of Ranch dressing.
Garnish if desired with thin radish slices, halved cherry tomatoes, diced cucumber, or shredded carrot. Any topping would be fine, just keep in mind that any liquid will thin the dressing.
One last note, grated parmesan cheese is a great add in or topping, but I would only use this if served indoors. Outside warm summer temps would make for a sour tasting, and sour stomach salad.

Potato Salad
Nuke you about 4 or 5 whole potatoes in the micro (until they are soft - not blowing up), let cool, peel or cut with skin on into chunks, chop or dice 1 medium onion, dice 2 kosher dills (or use dill relish), 4 or 5 hard boiled eggs (I don't use all of the yolks just about 3), mayonaise (Kraft- real mayo), a dash of mustard (French's), a dash of celery seed, paprika, black pepper and salt to taste.
Actually it is best to mix your yolks, mayo, mustard, and spices in a seperate bowl and then add the potatoes, onions, pickles/relish, and boiled egg whites.
I make this every major holiday, it is always a hit, you can boil the potatoes if you like.

try making a jello cake. Then top it with cool whip and blueberries for the stars and strawberries for the stripes.

Bake a flat cake. Use white frosting. Use blueberriers for the stars and halved strawberries for the stripes. Voila!!!!! You have an American Flag Cake!!!!!! Eat it with pride!!!!

take some hormel chili sauce without beans and sprinkle it with shredded american cheese. dip tostitio tortilla chips in and you're good to go. if you want something a bit cooler make a pie out ouf the chili dip and cheese.

Rocket Pops
red juice (red raspberry, cherry, cranberry)
blue juice (blue Kool Aid, Gatorade, blue raspberry) white juice (lemonade, coconut juice drink)
red string licorice for fuse
3 oz. paper cups
Popsicle Sticks
baking sheet
Line up several 3 oz. paper cups on a baking sheet. Pour 2 tablespoons of red juice into each cup. Freeze 2-3 hours until firm-slushy.
Remove from freezer and poke a popsicle stick into the center of each cup of juice. Add 2 tablespoons of white juice and freeze 2-3 hours.
Remove from freezer. Top off with blue juice and freeze 1-2 hours until slushy.
Remove from freezer and insert a 2 or 3-inch string of licorice into each popsicle. Freeze until hard. Peel off paper cups to serve.

1-1/2 cups boiling water, divided
1 pkg. (4-serving size) JELL-O Brand Berry Blue Flavor Gelatin
1 cup ice cubes, divided
1 HONEY MAID Graham Pie Crust (6 oz.)
1 pkg. (4-serving size) JELL-O Brand Strawberry Flavor Gelatin, or any red flavor
1 cup thawed COOL WHIP Whipped Topping
STIR 3/4 cup of the boiling water into dry blue gelatin at least 2 minutes or until completely dissolved. Add 1/2 cup of the ice cubes; stir until ice is completely melted. Pour into pie crust; refrigerate 5 to 10 minutes or until gelatin is set but not firm.
MEANWHILE, stir remaining 3/4 cup boiling water into dry red gelatin in separate bowl at least 2 minutes or until completely dissolved. Add remaining 1/2 cup ice cubes; stir until ice is completely melted. Let stand at room temperature 5 minutes or until slightly thickened.
SPREAD whipped topping evenly over blue gelatin layer in crust; cover with layer of red gelatin. Refrigerate 2 hours or until set. Store leftover pie in refrigerator.
