You just need to see a restaurant profit and loss statement or a budget. Follow this link to a Yearly P&L budgeting tool on the Samples page of my website. Look toward the bottom of the spreadsheet under "Expenses" and you'll find a complete list as recommended by the National Restaurant Association.
