To have what you've never had, you must do what you've never done. One of my favorite quotes.

People who stay in their comfort zone rarely ever grow. Its important to try to new things and learn to deal with change, that way when change is forced on you, you're ready for it.

You should always try to stay with a sure thing. If the other job is not as secure don't mess with it.
