The bronze age(s) and iron age(s) are stages of technological and economical growth of a society. Thus, they are both specific to the culture you are looking at - some societies never made it to a "bronze age" and remained in the stone age. However, the smelting of metals from rocks (mostly copper) occured around 7000 BCE, but that doesn't mean the formation of a society advanced enough to make completely metal tools or weapons. That did not start until the year 3000-2800 BCE in the middle east, and even later in Europe (notably Greece), India, and China.

When the technology for creating furnaces hot enough to melt other metals was finally developed, iron ore was extracted from rocks. This was about 2000 BCE, but it wasn't really developed into a 'science' until 1500 BCE in the middle east, and even later in other countries.
