'Dying' is the correct progressive form of the verb 'die', meaning 'to become dead'.
'Dieing' is a word, though, and it is the progressive form of the other verb 'die', which means 'to cut, form or shape with a die'. The noun 'die' refers to 'a device used stamp, cut or form', especially used on metal. Dies are often used to manufacture things. You may have heard of 'die-cast steel' or 'die-cast toy cars'.
There's even a third word that sounds the same: 'dyeing' which is the progressive form of the verb 'dye'... obviously that has nothing to do with death, unless your hairdresser screws up and you want to kill her...

I m not a linguist but there s something I don t understand (I m not a native English speaking person, so don t be too hard on me): if "dying" is the correct form of "die" (as in someone becoming dead), then what s the correct form of the verb "dye" - as in "I m changing the color of my hair"? This is a matter we never discussed in the English lessons, so I have to Google for it or ask stupid questions like in this case.
