I usually recommend a pretty picture book of your state. I found that Spaniards really appreciate a nice coffee table book. Maple candies. Coming home, I would look for something like a table cloth from Talavera (expensive, and watch for fake ones made in you know where!); turrones; cook books are super popular and there are some good ones in English; castanets (good ones you can play); if you are in Sevilla or Jerez, a venencia (sherry barrel sampling thing); fans; etc.

The ships are made to fit the neck of the bottle.
The masts and sails are collapsible. After insertion, the artist uses hook and wires to "raise" the masts. Please check out PBS.org , California's gold with Huell Howser. He did an entire documentary about these ship artists.
