Microwave Peanut Brittle Recipe
Note your microwave needs to be 750 to 950 watt. If your microwave is higher need to lower your cooking times and if your mircowave is less you will need to increase your cooking time.

1 cup sugar
1/2 cup corn syrup
1 cup peanuts
1 tablespoon butter
1 teaspoon vanilla
1 teaspoon baking soda
12-20 servings or 1 pound
19 minutes 10 mins prep
Mix sugar and corn syrup together and cook on high for 4 minutes.
Add peanuts mix well and cook on high for 3 minutes.
Add butter and vanilla and cook on high for 2 minutes.
Add baking soda and mix well, mixture will foam.
Spread on well butter foil.
when completely cooled break in to pieces.
Store in air tight container.
NOTE: Any type of nut can be used in place of the peanuts. Oh and don't dip this in chocolate it is too good!!

Chicken Pasta Salad Recipe
I wanted a good chicken pasta recipe to serve for a dinner at church and this filled the bill just right. It was a big hit and several ladies asked for the recipe. . The Cool Whip in the dressing gave it an interesting flavor.
2 1/2 cups diced cooked chicken
1/2 package cooked small shell pasta
2 cups diced celery
2 cups seedless grapes (red or green)
5 hard-boiled eggs, diced
1 (20 ounce) can pineapple tidbits
1 can sliced water chestnuts (optional)
Dressing
2 cups mayonnaise
1/2 cup sour cream
1/2 cup Cool Whip
1 tablespoon sugar
1 tablespoon lemon juice
3/4 teaspoon salt
1 cup cashew pieces
10-12 servings
1 hour 1 hr prep
In a large bowl combine all of the salad ingredients.
Combine the dressing ingredients except for the cashews and whisk until smooth.
Pour over salad and toss to coat.
Chill at least one hour.
Fold in cashews just before serving

Garden Vegetable Soup Recipe
This is a great soup to eat for those of you who are dieting. It is free (0 points) on the weight watcher program. Full of good nutrition.
2/3 cup sliced carrots
1/2 cup diced onions
2 cloves garlic, minced
3 cups fat-free broth (beef, chicken or vegetable)
1 1/2 cups diced green cabbage
1/2 cup green beans
1 tablespoon tomato paste
1 large tomato, diced
2 stalks celery, diced
1/2 teaspoon dried basil
1/3 teaspoon dried oregano
1/4 teaspoon salt
1/2 cup diced zucchini
4 servings
40 minutes 10 mins prep
In large saucepan that has be sprayed with pam, saute the carrot, onion, garlic and celery about 5 minutes.
Add broth.
Add cabbage, beans tomato paste, tomato, basil, oregano and salt.
Bring to a boil.
Lower heat and simmer 20 minutes, or until beans are tender.
Stir in zucchini and heat for 5 minutes more.
Serve hot.

Chicken Tetrazzini Recipe
This is the most amazing chicken casserole dish I have ever tried. I promise you will not regret making this. Don't omit the sherry, it's the ingredient that really makes it distinctive and delicious.
8 ounces medium egg noodles or wide egg noodles, cooked
1 1/4 cups heavy cream or half-and-half
4 tablespoons butter
8 ounces fresh sliced mushrooms
2 tablespoons flour
1 1/4 cups chicken broth
1 cup grated parmesan cheese
2 teaspoons course black pepper
salt
1/2 cup dry sherry (don't use cooking sherry)
3 cups shredded cooked chicken breasts
1 teaspoon dried tarragon
2 tablespoons chopped fresh parsley
1/4 cup breadcrumbs
6-8 servings
50 minutes 30 mins prep
Preheat oven to 325.
Butter 3 qt, oven proof casserole.
In saucepan, melt butter and saute mushrooms until tender, about 10 minutes.
Blend in flour, 3/4 c cheese and chicken broth.
Cook until smooth and thick.
Add seasonings, except parsley.
Remove from heat and blend in cream and sherry.
Add shredded chicken and cooked noodles.
Pour into dish and top with bread crumbs, parsley and remaining cheese.
Bake uncovered about 20 minutes.
Brown crumbs under broiler if necessary.
You may want to adjust the liquids a bit if you prefer a creamier sauce.

Lasagna isn't hard to make and you can eat the leftovers for a week. Chile is easy as well. Some of the things I eat a lot are: cereal, waffles, yogurt, broccoli (I buy frozen and heat it up in the microwave), grilled cheese sandwich, spaghetti. I am a terrible cook and I can make all this stuff. Look on foodnetwork.com for easy recipes. Hope this helps!

You know, even if your totally afraid of cooking, hamburger helper or tuna helper is simple. Buy a pack of meat and the box. Look on the back to make sure you have butter or whatever other ingredients (not many) and call yourself a cook. Spaghetti is really simple too. Noodles in box and sauce in jar.

How about Mexican? Italian pasta and Indian curry are good too. If you want to stick to American, how about a salad?
If you want to cook a simple, healthy meal, go get some chicken breasts and cut them up. Get McCormicks fajita mix and follow the directions. Get some tortillas, shredded cheese, and light sour cream. Great meal.

You must still be pretty young?I used to have the exact same diet until the Dr.told me I am a stroke waiting to happen.I've always heard other people talk about their cholesterol level being high and what their Dr's told them they can and can't eat..always thought too bad for them but now I am one of them...sigh...I don't know what to suggest because I'm a milk and cereal eating fool!

home-made pudding pops...just put some pudding in cups with a popsicle stick & throw in the freezer...a few hours later, WA-LA! Pudding Pops, everyone's childhood fav....if you grew up in the 80's that is.

raw fruits & veggies are very easy and much more healthy. Not that there's anything wrong with what you eat, you should just eat less of it and more of the good stuff.
