can i take specific episodes from my boxset of dvd's and back them up on my computer?

You can load all the episode you want onto your hard drive. All you need to do is rip the episodes using DVD Decrypter. It's a free program you can download and use. It will most likely rip the entire disk.

You can mix and match the episode and re-burn them if so desired, except that can get into rights of the maker, so I don't suggest that!- that's my disclaimer!

Shrink is also good free software. But it should only be used to make back ups of dvds you already own.
