I know the sets have storage & all, but not EVERYTHING from EVERY show can fit in there; do you suppose to the people involved with the shows production get to take what they wish to as keepsakes?

I don't know about the t.v. show, but I do know sometimes on movies they have sent the props to be auctioned for charites. A company that I use to work for got the ax used in "The Patriot" a news paper used in Spider Man it was auctioned off and the money was sent to a childrens hospital.

They may do that or you know how they sell off famous peoples stuff its possible they auction it that way.....

They only keep what they think they can use a other time. I went on a tv studio and they have big locals to put all the accesories, costumes,... It's like if you are going shopping

Some of it "vanishes" some is thrown away, while other parts of it go into storage. Some is sold.

And yes by "vanish" I mean stolen by the workers.
