2 CH2O (sugar) + H2O ----> CH3-CH2-OH (Alcohol) + CO2

In the presense of water, yeast converts sugars into alcohol and carbon dioxide gas. The sugar formula above, is only the relative ratio of atoms...real sugars have either 6 or 12 carbons with the associated hydrogen and oxygen atoms (e.g. glucose is C6-H12-O6).
