Okay, this has nothing to do with the category it's in, so you need to be more careful about that.

As for what makes it crunchy, that would be the milk and egg mixture that the bread is soaked in. Just like anything else with those ingredients, it will get crusty when you cook it, and the more you cook it, the crustier it gets.
