Are they trying to get rid of the ice? If so, why do certain restaurants have more ice to get rid of? Why don't I see this in sushi restaurants, then? Or is there some other reason? Nothing comes to mind, and I have been curious for years. Anyway, if you know, I'd love to hear. Heck, even if you don't know but have a good (or humorous) explanation, that would be great, too.
