I believe Hitchcock directed at least one film with just one or 2 actors but I cannot remember the title...

Sleuth (1972)
Stars Michael Caine and Sir Laurence Olivier. Has 4 other cast members listed on IMDB but they are very small parts. It was based on a play and the play only had 2 actors in it. It's a very good movie -- if you get a chance to watch it you definitely should. Has an awesome surprise ending.

Hitchcock never did a film with just two actors generally two protagonists, but never two actors you might be thinking of things like rope or dial m for murder where there were just a handfull of actors and long 15 minute takes set in generally real time.

Same Time Next Year
Alan Alda and another actress who name I can't remember meet up the same time each year for an affair, very few other actors around, as most of the action takes place in the hotel room
pretty good film, but a little dated now

How about "Misery" based on the Steven King book? I would say that 95% of that film is about the two main characters. If that's not good enough, how about Tom and Jerry? Or "Castaway" with Mr. Hanks and his friend Wilson, the volleyball?
