The church she was in during Marcy's wedding was hit by a tornado. Evangeline recieved a blast of glass from an exploding window in her face resulting in her (I'm sure temporary) blindness.
I am very, very ashamed that I know that.

I believe that during a storm she was near windows that broke and glass got in her eyes or around her eyes causing the blindness.
