It may have to do with men's genetic predisposition to produce as many offspring as possible. It's an evolutionary instinct to reproduce and reproduce successfully.
Large breasts, buttocks and hips generally indicate that a female can give birth to a healthy baby.
This is offset by the other genetic predisposition for status among primates, so that thin women--dolls, or trophies in a subconscious way--area also sought after.

When they walk, it has more wiggle and bounce than another part of her body. We men have grown up relating to a buttuck conquest as a transformation into manhood. That part is what generally defines a womans shape / figure. The butt has more flesh, (in some cases), more to "grab" hold of. Ther are some beatuies out ther that would drive a man crazy. Oops !. Well My theory is that men want the "holy grail" of women, they want that one place where they know you won't let them go..another theory is that they have that mindset of the perfect woman has that hour glass figure like in cartoons from the 40's so they look for that in a woman

According to a study shown on TV, the bootie is a representation/relation to the breasts, which symbolize child rearing.
Personally, the size/shape of the butt can tell you a lot about the rest of the body.

I think it's just what they prefer. The butt is attractive to a guy because it's part of her hour glass figure and that's what they like. But some guys may be more into legs or her breasts than they are into her butt. It's all preference I think.
