Final Fantasy VI (3 in the US), Halo, and Starcraft.
Final Fantasy VI: Many would say VII was the best, but for me VI was the original. This was the game that turned me on (and more or less introduced me) to RPGs, now my favorite genre. Everything from Kefka's laugh to the mystery surrounding General Leo to first discovering the truth about Shadow... This game has so much replay value, an amazing storyline, and top-notch gameplay features. An absolutely stunning classic.
Halo: Arguably the best FPS of all time. It's innovative, has a great and challenging 1 player/2 player co-op mode, and some of the best multiplayer action on any console (right alongside Goldeneye from the N64 days).
Starcraft: My favorite RTS. Blizzard hit this game so spot on, with amazing parity between the three races, a stellar campaign mode, and absolutely groundbreaking RTS gameplay. There's a reason so many people still play, nearly a decade after it was released.

Honorable mention: SSB Melee (arguably the best fighting game of the last 5 years, and definitely right up at the top for best of all time), Grand Theft Auto 3 (I'm big on the games that started innovation, and GTA 3 paved the way for bigger and better Vice City and San Andreas), Final Fantasy VII (It would be top 3 if FF VI wasn't already up there... The game that defined the modern RPG), Metal Gear Solid (how many failed impostors and sequels is it still spawning today?), Madden/NCAA Football (one of the most consistent series in all of video games, which keeps getting better every year), and Everquest (launched the MMORPG movement)

from the 80's: Battle Zone - tank simulator. Spent way too much money in arcades trying to get all of the high scores.

from the 90's: Doom - used to play it all the time at work. It was the first time I'd played a network game.

today: GT4 - It's just great.

Kingdom Hearts, Final Fantasy X-2, and Harvest Moon: It's A Wonderful Life are my favorites. Japanese video games are awesome. :O
