Probably because they don't take the time to stop and think.
I think that if people would stop and consider what they were doing and why they were running full tilt to do three things at once, they might realize that all these things can wait, and they won't really be that important in the long run.
I mean, for me, looking back, I would rather have done one thing right the first time while not hurrying (like just my homework) rather than three things at once in a rush (like eating, trying to set up a meeting on the phone and doing my homework at the same time while being late for something else) and doing them badly. I think I would have enjoyed life more. I think everybody would.
But the problem is we don't stop to think about what our priorities are.

All people are not in a hurry. In cities several people seem to be in a hurry, because of the fast paced environment. The fact that people are living miles away from their families and jobs make them eager to move fast to save time.

In a hurry to just to arrive and wait in line.
In a hurry so they can go get stuck in traffic.
People like to be fast to make up for the time when they can't do anything

Being in a hurry is an excuse not to focus on what really is important, you do this often enough and you can race your whole life away. I belong to a Gym and I am amazed that the treadmills are always busy. Like hamsters pacing just to pace. The answer is to focus on organization then you don't have to be a hamster.

Thats a good question..Seems that today everyone is in a hurry to go somewhere or get things done...People just need to learn to slow down and aprreciate what they have around them

The pace of life is faster than it used to be, people try to do too much, keeping up with the joneses and all that stuff. In the old dayz....(how many times have we all heard that phrase) when men were men and women did the dishes and ran after men blagh blagh, oh my goodness look at the time!!!!!!!! got to run
