Our church has recently installed a rather sophisticated sound system for the amplification of songs and instruments. We would also like to record the service and create MP3 files for the website for podcasting. Is this an easy thing to do or is is beyond the average hacker's capability?

The easiest way is to make a "bootleg" copy of the service. Find someone with an MP3 voice recorder and record away. Depending on your sound system and the recorded, you might even be able to hook the recorded directly into the sound system... the system will think the recorder is just a speaker and the recorder will think the system is a microphone.

Other than that, you will have to provide some more specifics about your setup.
