A mermaid (from mere in the obsolete sense 'sea' + maid(en)) is a legendary aquatic creature with the head and torso of human female and the tail of a fish.

Since it's not real, how could eating it be considered cannibalism?

Only if you're a mermaid. I guess it depends on which half you eat. The human half is probably considered cannibalism but the fishy half is up for grabs. Who knows...they might not even taste good!
