"Sans sheriff" would mean without a sheriff. Sans serif is a type of font that does not use 'serifs', which are the little lines at the ends of characters.

It's actually MS Sans Serif. It is the name of a type of font. Every font has a different style. So MS Sans Serif is a font thah has a different style for every character. You can see the difference between the styles of two different fonts in Microsoft Word. Like :
Just open the Microsoft Word and type some characters, now select it and then go to Menu (on the top where File, Edit, View, etc.. are there) and click Tools and select FONT, and select a different font.

it is French for 'without', so it would be 'without a sheriff'. 'Avec' means 'with'.
