can i use chains and those rock climbing hook things for turnbuckles.?

If you want to break your neck you can, and you like getting hit in the back with chains.

You can pretty much use anything you like to make ropes or turnbuckles, but uh... I highly suggest that you dont, especially if you plan on trying to immitate the high flying stunts you, unless you want to be a paraplegic who is confined to a wheel chair.
