There is a wide variety; it depends on the species. Most aquatic turtles are carnivorous at the younger stages eating insects and fish, and then become more vegetarian as they age eating a variety of pond plants and lettuce. Or you can just buy turtle pellets, which provide a balanced diet.

It would depend on the type of turtle you have. I have red ear sliders that are in the house, they eat store bought turtle food on a regular basis. But for snacks you can feed them lettuce, bread and they love bologna. The ones in the outside pond eat small guppies. If you have a box turtle, you can feed them lettuce, they also get their water from this, so make sure you keep fresh pieces of lettuce out for them.

It depends on the species of turtle you have. Do a google search for caresheets on the species you own. It will tell you.
