Although I enjoy all three, I would always pick Mexican if it was in the mix.

I love eating in hole-in-the-wall, out -of-the-way, word-of-mouth, places that offer authentic Mexican cuisine. I can't get enough. Ethnicity? I am an Irish-American with a smidge of Dutch and some Cherokee or Cree Indian blood. I don't know where it comes from but sinking my teeth into some really good Carne Guisada with a side of rice (the yellow kind that hints of a saffron essence), some creamy guacomole, real hot sauce (not the Gringo stuff they bring out at first), crispy thin tortillia chips which are still hot from the fryer, some flour tortillas and frijoles and I am set up. I haven't met the Mexican dish I didn't like. I recently had some Spinich Encheladas which had Pepper Jack, queso, and one other kind of cheese in them. They were nestled in a creamy sauce with hints of cheese, cilantro, and cumin. I wish the resturant had been in my home town but it is 275 miles away! I am considering moving there, though, if the owner will keep me supplied in Soppapillas and his home-made Tomatillo and Jalapeno jelly.

Italian cuz there's a Mexican making the dish in the kitchen and then there's the Chinese that owns the place but you'll never see them cuz they're too busy counting the money in the back. So .. that sums it up.

I'm chinese and I've been eating chinese food for the past 23 years straight. My body rejects it like a virus and every night I get the dreaded "ring of fire" because of it. Since spicy Mexican food does the same job (but it tastes tons better), I'm going with Italian.

I hardly ever turn down Mexican, but it's been awhile since Italian so I will go with that.
